Ingredients:
- 2 tbsp. oil
- 2 tbsp. butter or margarine
- 2-3 large baking potatoes, washed and cut into very small cubes
- 1/2 onion, diced
- 2 carrots, peeled and diced
- salt and pepper, to taste
- 1 lb. smoked sausage, diced
- 6 eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese, optional
Directions:
- Heat oil and butter or margarine in a large skillet. Add potatoes, onion, and carrots. Season to taste with salt and pepper. Cook for 15 minutes over medium heat, until potatoes begin to soften and brown. Add sausage to the skillet and cook an additional 10-15 minutes.
- In a bowl, whisk together eggs and milk. Push potatoes and sausage combo over half of the skillet. Pour eggs into the other half and scramble until done. Stir to combine everything. Season again with salt and pepper to taste. Top with shredded cheddar cheese, if desired and serve.
