This is what we had for dinner tonight.  I haven't actually eaten it yet since I had a late lunch.  Hubby did eat it and he didn’t say anything about it so I assume it was ok.  It is a pretty simple recipe to make.

Macaroni and Cheese Casserole

This is a great mac and cheese casserole.  I think I made a boo boo last night though because it tasted like cottage cheese a whole lot.  I have made it other times though and it has been fine. 

IngredientsL
  • 1 16 oz container low-fat cottage cheese
  • 1 8 oz container low-fat sour cream
  • 1 large egg
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 2 cups shredded sharp Cheddar cheese
  • 8 oz dry elbow macaroni
  • paprika
  • breadcrumbs and butter/margarine (optional)
Directions:

Cook the macaroni while you prep the rest of the ingredients.  In a large bowl, combine the first 6 ingredients and stir well.  Drain macaroni and add to bowl.  Stir to combine.  Spoon into a lightly-greased 1 quart baking dish and sprinkle with paprika.  If you would like to put a crust on it, melt a little butter and stir in some breadcrumbs, then sprinkle that on top as well. 

Bake at 350 degrees for 45 minutes., and let stand 10 to 15 minutes before serving.

This is a great recipe that I had the other night.  This isnt the exact same one as the one I used said to use Velveeta instead of cheddar.  The Velveeta made it a lot less greasy then I think it would be if I used cheddar.
