Dinner tonight - Sour Cream Chicken Enchiladas

Sour Cream Chicken Enchiladas

Ingredients

1 16 oz container fat free sour cream ($.88)
1 can of green chilies ($.68)
1-2 cups homemade chicken stock (free)
about 1 1/2 cups of shredded chicken ($1.50)
1/2 tsp garlic powder ($.05)
Salt/Pepper, to taste
10 flour tortillas ($1.14)
1-2 cups shredded cheese ($.75-$1.50)
2 cups of frozen corn ($.44) On sale the other week for $.88/bag!

Directions

1. In large skillet, whisk sour cream, green chilies and 1 cup of chicken stock.  Add more chicken stock until it comes to the consistency you want for your sauce. Add garlic powder and salt and pepper to taste.

2. Before adding the cooked and shredded chicken, save 1 cup of the sour cream sauce. 

3. Stir chicken into the sauce and let simmer about 10 minutes, allow flavors time to infuse.

4. Spoon sour cream chicken sauce into tortillas.  Roll and place “seam down” into a baking dish.  10 enchiladas fit comfortably in a 9×13 dish.

5. Take the sour cream sauce that you removed and spread it over the tortillas.

6. Sprinkle cheese over the top and bake about 15-20 minutes at 350.

7. Cook corn as directed on package instructions.

8. Serve Sour Cream Chicken Enchiladas with Corn.

Dear Den 1 Bear Parents,

Today we completed requirement  b, e, and j for Achievement 3, What Makes America Special?.  We completed the Character Connection for Citizenship; we had the boys tell about two famous Americans, and discussed when Virginia was admitted to the Union.  We also discussed Virginia’s state bird, its flower, the symbols on the state flag.

If time allowed, we completed c  for Achievement 16, Building MusclesThey competed with the other boys in the den in the crab relay, gorilla relay, 30 yard dash, and the kangaroo relay.

There has been a website setup for our den.  The site has our calendar of events as well as other information.  There will also be a copy of the parent information letters on there just in case you miss a den meeting and would like to know what we did.  The site is password protected so please keep the letter as a confidential document and discard of properly, if needed.  The website is http://pack198den1.myscoutlink.com.  The password into the site is den0910. 

Next week will be our pack meeting on October 5, 2009.  We are scheduled to bring baked goods for the raffle.  I will send out a reminder this weekend for anyone who may forget.

For our next den meeting on October 12, 2009, I ask that all the boys share the information about what we discussed on the state, with an adult, who should then sign the boy’s book.  I am also asking for everyone to bring their books on this date so that I can check them for any achievements that the boys have worked on their own.

Upcoming Dates

October 3, 2009 - Concession stand at CUMC.  Still need volunteers for all time slots.

October 5, 2009 – Pack meeting.  Den is to bring baked goods for raffle.

October 12, 2009 – Den Meeting at 7pm.

September 21, 2009

Dear Den 1 Bear Parents,

Today we completed requirement c for Achievement 8, The Past is Exciting and Important.  We filled out the information pages on the boys so that they can have their own section in the scrapbook that we will be working on during this next year.

We also completed a requirement for Achievement 16, Building Muscles.  We had the boys do physical fitness stretching exercises, and then curl-ups, push-ups, standing long jump, and softball throw.  We created a record of each boy’s numbers for the den scrapbook.  We will repeat these activities in future meetings to measure progress when we need a physical activity.

This Thursday, September 24, 2009, the Culpeper Museum of History (803 South Main Street) is having an open house from 6pm – 7:30 pm.  The theme is “Native Americans.”  If any scouts would like to attend, going to this event will fulfill Achievement 3d, Find out where places of historical interest are locating in or near you town or city, 8e, Find out some history about your community, 10a, Go on a day trip or evening out with members of your family, elective 24a and c, which deal with learning about American Indians.

For our next den meeting on September 28th, please have your son complete the family history chart for us to add to our den scrapbook which will fulfill Achievement 8d.  Also, with your help, I would like to boys to find out about two famous Americans (Achievement 3b) to discuss at the next den meeting.

Italian Stuffed Shells

These were what I made for dinner last night.  They were really good.

I originally intended on making these Mexican Stuffed Shells from Tricia’s March Menu.  Just not feeling that “unstuffed” or “Mexican” vibe this afternoon.

Ended up making Italian Stuffed Shells.  And a whole lotta ‘em.

Recipe below is the doubled version.  Will make at least 2 9×13 pans.  And costs just over $10! Got another meal stashed into the freezer!

And I need to include this.  I only ate 4 of these.  Because that’s all that my teeny-tiny stomach would allow.  I totally would have had 8. Or 10. Maybe even 12!  They were THAT good.

Ingredients
2 boxes of jumbo pasta shells ($4) I used about 2/3 of the shells, so you could get by just cooking 1 1/2 boxes.
2 26 oz. cans spaghetti sauce ($2) Currently on sale for $1/can.
1 box frozen spinach ($.50) These guys are regularly on sale for $1 and use $1/2 coupon.
1.5 lb. ground beef ($2.09) On sale recently for $1.39/lb!
1 medium onion ($.30)
2 tsp garlic powder ($.10)
1 tsp each salt and pepper
2 eggs ($.20)
2 cups shredded cheese ($1.25) Omit if dairy free

Tonight’s Veggie: 2 Broccoli heads ($.50) On sale for $.99 a bunch this week!

Directions
1. In large pot, cook pasta according to package instructions. Drain and set aside.

2. Spread 1/21 cup spaghetti sauce into base of each baking dish.

3. Cook frozen spinach as directed on package.  Drain excess liquid after cooking.

4. In large skillet, brown the ground beef with chopped onion. Drain, rinse and return to skillet.  Add the rest of the spaghetti sauce, garlic powder, salt and pepper.  Stir in the spinach.

Here is where I divided the meat into 2 parts.  One part dairy-free.  The other part with cheese.

5. To each meat, stir in 1 egg.

6. To meat sauce with dairy, stir in 1 cup shredded sharp cheddar cheese.

7. Spoon meat into pasta shells and place into baking dishes.  (If making dairy free and ones with dairy, use separate baking dishes!)

8. Sprinkle cheese over the ones that contain cheese in the meat sauce.

9. Bake at 350 for 20-30 minutes.

10. Prepare veggie as side dish. Tonight for us, it was steamed broccoli!  Steam broccoli in stovetop steamer, or in microwaveable dish with water and covered in plastic wrap for 4-5 minutes.

11. Serve Italian Stuffed Shells with Steamed Broccoli.  Freeze the rest for later!

Cost $10.44 plus veggies

**This easily made 2 dinners plus 2 lunch leftovers for us!
