Update

I have decided that it would been a good idea to keep this blog updated. I honestly don't remember the last time that I posted to it and that is just sad. I think it helps brain power to write. So, now that I have the ability to post from anywhere, there really is no reason not too. However I have a feeling I will pissing off a lot of people with the stuff that I write. LOL

Cheesy Chili Mac

Ingredients

1 spray(s) cooking spray

2/3 pound(s) uncooked lean ground beef

2 medium uncooked onion(s), chopped

29 oz canned stewed tomatoes, Mexican-style (undrained)

2 1/2 cup(s) canned tomato juice

4 oz canned green chili peppers, diced, drained

2 tsp chili powder

1 1/2 serving(s) uncooked macaroni, elbow-size

31 oz canned pinto beans, rinsed and drained

1/2 cup(s) low-fat, shredded Cheddar cheese

Instructions
  • Coat a large skillet with cooking spray; set over medium-high heat. Cook beef and onion until meat is browned, stirring and breaking up meat with a spoon as it cooks, about 10 minutes; drain off fat.
  • Stir in undrained tomatoes and their juice, tomato juice, chili peppers and chili powder; bring mixture to a boil.
  • Stir in macaroni and beans; return to a boil. Reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Spoon chili into bowls and sprinkle with cheese. Yields about 1 cup chili and 1 tablespoon cheese per serving.

Bowtie Chicken Caesar Salad

Ingredients:

  • 2 bunches green leaf lettuce, chopped
  • 1 bag Marie Callendar’s fat free croutons
  • 1 bag Almond Accents/Roasted Garlic Caesar
  • 2 Chicken breasts, boiled with an onion and salt and pepper
  • 2 cups bowtie pasta, cooked
  • 4-6oz shredded parmesan cheese
  • Brianna’s Asiago Caesar Dressing

Directions:

  1. Toss all the above ingredients with caesar dressing right before serving.  Serves 20-25.

Crockpot Potato Soup

Ingredients:

  • 1 bag frozen southern style hash browns
  • 2 14 oz cans chicken broth
  • 1 can cream of chicken soup
  • 1/2 cup chopped onion
  • 1/3 tsp black pepper
  • 8oz cream cheese
  1. Combine all ingredients except cream cheese into Crockpot.  Cook in Crockpot for 5 hours.
  2. Add cream cheese.  Cook for 30 minutes.

I am a horrible blogger…

…so yes, I haven't been keeping my blog up….and I want to start doing that.  Now that soccer is over for Brynlee and football is over for Evan, I might be some time to try to catch up.

The biggest news is that I finally got a fulltime job.  I start November 5th at Geico.  It wont be phone work which I find wonderful.  It may not pay  much either but it will get my foot in the door.  I do have a Master’s degree after all so I figure that something should happen when it comes to that. 

So even though I am making this entry brief since it is midnight, I do have plan on working on this blog and getting it where it should be.

Slow Cooker Enchilada Casserole

Ingredients
  • 9 6-inch corn tortillas
  • 15 ounces canned enchilada sauce
  • 1 15-oz. can black beans, rinsed and drained $
  • 2 cups frozen corn
  • 2 1/2 cups shredded Cheddar
  1. Place an oven rack about 5 inches from broiler and preheat broiler to high. Toast tortillas under broiler, turning once, until lightly spotted, 2 to 3 minutes total. Reserve 2 Tbsp. enchilada sauce. Combine beans and remaining sauce in a bowl.
  2. Mist slow-cooker insert with cooking spray. Place 3 tortillas in bottom, breaking one into pieces if necessary to cover bottom. Spread half of bean mixture over tortillas. Sprinkle with 1 cup corn and 1/2 cup cheese. Repeat with 3 more tortillas, remaining bean mixture, remaining corn and 1 cup cheese. Top with 3 remaining tortillas, reserved sauce and remaining 1 cup cheese. Cover and cook on low until cheese has melted and is beginning to crisp on edges, 2 to 3 hours.

So yes, I have been slacking on my blog. It has been hard to update as I am trying to pass all my classes so that I can graduate this quarter. I really want to be able to be done with school so that I can possibly finally get a job. I am constantly applying for jobs...mostly government which might be a bad thing...so I know I will eventually hear something. I know the big problem is that I haven't worked full time since 2005. So right now, I just need something in order to show some job history.

On top of that, I am starting the "spring cleaning" in the house to start getting rid of stuff. We have a lot of clutter so I am trying to sell it and what isn't worth selling or doesn't sale, gets taken to the thrift store. I am hoping to get it done within the next few weeks.

Well, got to get ready, we are taking the kids bowling with the scouts tonight.
