Meat Sauce

Ingredients:

  • 1 lb. ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 zucchini, quartered lengthwise and sliced
  • 1/2 tsp. salt
  • 1/4 tsp. crushed red pepper flakes
  • 1 15oz can tomato sauce
  • 1 15oz can crushed or diced tomatoes
  • 1 4oz can tomato paste
  • 1/2 cup beef stock, optional
  • 3 tsp. Italian seasoning
  • 2 tsp. sugar
  • 1/2 – 1 tsp. salt, to taste
  • 1/2 tsp. black pepper
  • 1/8 tsp. allspice
  • 1 bay leaf

Directions:

  1. In a large skillet or saucepan, add ground beef with the onions, green peppers, garlic, and zucchini.  Season with 1/2 tsp. salt and crushed red pepper flakes.  Cook until browned; drain. 
  2. Add the remaining ingredients and stir to combine well.  Continue cooking over medium heat until it just starts to bubble.  Cover, reduce heat, and simmer as long as you like.  Serve over pasta.
