Bean Burritos

Ingredients:

  • 15 oz. pinto beans
  • 1/2  cup brown rice
  • 1 cup diced tomatoes with green chilies
  • 8 burrito sized flour tortillas
  • shredded cheddar cheese

Directions:

  1. Preheat oven to 375 degrees.
  2. Cook rice as instructed on the package.
  3. In a medium size skillet, add the beans, tomatoes with green chilies, and the cooked rice.  Let this simmer for 10 minutes.
  4. Once the mixture is done simmering, add 2 tbsp. of the mixture to a tortillas and top with cheese.  Roll each tortilla and place seam down in a greased 9 x 13 baking dish.  Top with cheese
  5. Bake in oven for about 15 minutes.
