Ingredients:
- 15 oz. pinto beans
- 1/2 cup brown rice
- 1 cup diced tomatoes with green chilies
- 8 burrito sized flour tortillas
- shredded cheddar cheese
Directions:
- Preheat oven to 375 degrees.
- Cook rice as instructed on the package.
- In a medium size skillet, add the beans, tomatoes with green chilies, and the cooked rice. Let this simmer for 10 minutes.
- Once the mixture is done simmering, add 2 tbsp. of the mixture to a tortillas and top with cheese. Roll each tortilla and place seam down in a greased 9 x 13 baking dish. Top with cheese
- Bake in oven for about 15 minutes.
