Ingredients:
- 1 1/3 cups flour
- 3/4 tsp baking powder
- 1/4 tsp. salt
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 tsp. lemon zest
Directions:
- Preheat over to 350.
- In a small bowl, combine all the dry ingredients.
- In a mixer, beat butter and sugar until light and fluffy.
- Beat in egg and vanilla until well blended.
- Reduce heat to low and beat in flour mixture just until combined, scraping the bowl with a spatula.
- Stir in lemon zest.
- Drop dough by heaping teaspoons 2 inches apart on parchment lined cookie sheet.
- Bake for 10 minutes or until just brown around the edges.
