Lemonade Cookies

Ingredients:

  • 1 1/3 cups flour
  • 3/4 tsp baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 tsp. lemon zest

Directions:

  1. Preheat over to 350.
  2. In a small bowl, combine all the dry ingredients.
  3. In a mixer, beat butter and sugar until light and fluffy.
  4. Beat in egg and vanilla until well blended.
  5. Reduce heat to low and beat in flour mixture just until combined, scraping the bowl with a spatula.
  6. Stir in lemon zest.
  7. Drop dough by heaping teaspoons 2 inches apart on parchment lined cookie sheet. 
  8. Bake for 10 minutes or until just brown around the edges.
