Artisan Bread

Ingredients:

  • 3 cups warm water
  • 1 1/2 tbsp. salt
  • 1 tbsp. yeast
  • 6 1/2 cups whole wheat flour

Directions:

  1. Mix in a very large bowl, just until all flour is wet.  Cover loosely with saran wrap.  Let sit for 2 hours.
  2. Shape into 4 grapefruit size balls and leave on cookie sheet (sprinkled with cornmeal).  Let rise around 40 minutes.
  3. Preheat over for 450.  Put a pan on the bottom race and a basking stone on the middle.  Slide loaves onto middle cookie sheet and then pour water in the bottom pan.  Then close over quickly.  The steam will get trapped in your oven.  Cook 20-30 minutes or until brown on top.
