Cornbread and Beans Pie

I actually found a recipe that Evan ate Smile

Ingredients:

  • 1 box corn muffin mix
  • 1/3 cup milk
  • 1 egg
  • 1 lb. ground beef
  • 1 taco seasoning packet
  • 1 can ranch style beans (I couldn't find any at the store so I bought chili beans and used 2 cans)
  • 1/2 frozen corn (I didn’t put any in because Evan and Jay do not like corn)

Directions:

  1. Preheat oven to 375 degrees.
  2. Mix the corn muffin mix, milk, and egg until smooth consistency is formed and set aside.
  3. In a large skillet, brown the meat and add the taco seasoning as instructed on the packet.
  4. In a medium skillet, warm the beans and corn, the add in the cooked and seasoned ground beef.  Let this simmer for 5 minutes.  Pour this mixture into a 9 inch pie pan and spring the corn muffin mix on top.
  5. Bake in over for 15 minutes or until corn muffin mix is completely done.
