Southwestern White Chili

Ingredients:

  • 2 tbsp. Italian dressing
  • 1 lb. boneless, skinless chicken breasts
  • 1 small onion, chopped
  • 2 cans (15 oz. each) white beans, rinses
  • 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
  • 1 can (4 oz.) green chilies, undrained
  • 1 tsp. ground cumin
  • 1 1/2 cups Mexican style cheese, shredded
  • 2 tbsp. chopped fresh cilantro

Directions:

Add chicken and onions to a slow cooker.  Cook for 3 hours on high.

Stir in beans, brother, chilies, and cumin.  Cook another 1-2 hours on high.  Once complete, shred chicken.

Service topped with cheese and cilantro.
