Macaroni and Cheese Casserole

This is a great mac and cheese casserole.  I think I made a boo boo last night though because it tasted like cottage cheese a whole lot.  I have made it other times though and it has been fine. 

IngredientsL
  • 1 16 oz container low-fat cottage cheese
  • 1 8 oz container low-fat sour cream
  • 1 large egg
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 2 cups shredded sharp Cheddar cheese
  • 8 oz dry elbow macaroni
  • paprika
  • breadcrumbs and butter/margarine (optional)
Directions:

Cook the macaroni while you prep the rest of the ingredients.  In a large bowl, combine the first 6 ingredients and stir well.  Drain macaroni and add to bowl.  Stir to combine.  Spoon into a lightly-greased 1 quart baking dish and sprinkle with paprika.  If you would like to put a crust on it, melt a little butter and stir in some breadcrumbs, then sprinkle that on top as well. 

Bake at 350 degrees for 45 minutes., and let stand 10 to 15 minutes before serving.
