1 (16oz) container low fat cottage cheese
1 (8oz) container sour cream
1 large egg
3/4 tsp salt
1/4 tsp pepper
2 cups shredded sharp cheddar cheese
8 oz dry elbow macaroni
paprika
breadcrumbs and butter/margarine (optional)
Cook the macaroni while you prep the rest of the ingredients. In a large bowl, combine the first 6 ingredients and stir well. Drain macaroni and add to bowl. Stir to combine. Spoon into lightly greased 1 quart baking dish and sprinkle with paprika. If you desire, you can melt a little better and stir in some breadcrumbs, then sprinkle that on top as well.
Bake at 350 degrees for 45 minutes, let stand 10 to 15 minutes before serving.
This one was a big hit with my kids and myself. I really loved it. My husband thought it was too dry. Either way, I would make again.
